VFCP respectfully asks the Ghana Ministry of Health to issue a policy requiring all local food sellers to put ‘Best Before Dates’ on local foods for food safety, health, and security. VFCP has observed that local food, like kenke, is best for only 2 days. Kenke and other similar foods begin to develop bacteria 3 days after cooking. After three days, all foods in the kenke categories must be reheated before eating to prevent bacteria that can cause food poisoning, resulting in vomiting, and creating contagious diseases. These illnesses are preventable when safety measures are put in place.
